A Sense of Place

At Nácar we are creating our own sense of place by championing the purveyors of regional produce and thoughtful imported goods.

Oysters are subject to their environment and this is their Merrior. The current and the tide, temperature of the water, the food sources, salinity and mineral content of their surroundings. This environment can change with in a  short distance creating a shift in their flavor and harvest season.

Terrior presumes that the land from which grapes for wine are grown imparts a unique quality that is specific the plants' habitat. Together, these contextual characteristics are said to have a character; this is terrior.

Other crops for which terroir is studied include cider, coffee, chocolate, chili peppers, hops, agave (for making tequila and mezcal), tomatoes, heritage wheat, and cannabis.
